Helllooo, someone wants to say good morning. Err, something. Some thing wants to say good morning.
Fried rice is typically a side dish during a nice dinner, as you all know, but I’ve decided to change things up and make is a breakfast dish, although Americanized due to the hefty addition of bacon.
This breakfast is the best, because it has bacon and eggs, but also because it tastes better the next day. What does that mean for you? Make this on food prep Sunday, and the flavors get better the longer it sits. American-Asian fusion at its finest, my friends.
You eat this dish out of a bowl, (Not that I’m stating the obvious) which is my favorite way to eat anything in the morning, if I even eat, because I am usually running late and eating and applying mascara at the same time. Talent.
This recipe comes together very quickly, and is my new favorite thing, and is perfect for those of you who are #teamwhiterice. Enjoy!
Some cook’s notes:
- Liquid aminos, or coconut aminos are a soy-sauce substitute that doesn’t contain any soy. They can be found at health food stores.
- If you are watching your cholesterol, I would eliminate the fried egg on top, because they’re definitely optional.
Paleo Garlic-Ginger Breakfast Fried Rice
- 6 oz. bacon
- 2 tbsp. bacon fat
- 2 tbsp. sesame oil
- 1 tbsp. minced garlic
- 2 tbsp. grated ginger
- 6 eggs, divided
- 3 1/2 cups leftover rice
- 1/3-cup liquid aminos
- 2 tbsp. sesame seeds
- 2 cups diced lettuce
- In a large frying pan, fry bacon. Set aside, let cook, then dice bacon into small pieces. Reserve 2 tbsp. bacon fat from frying.
- In a heavy-bottomed pan, wok, or cast-iron dutch oven, heat reserved bacon fat and sesame oil on medium heat. Once glimmering, add garlic and ginger. Watch closely so it doesn’t burn.
- While ginger and garlic are sautéing, whisk 2 eggs to scramble. Add to oil, garlic, and ginger. Make sure to constantly whisk eggs once added, so they do not stick to the bottom of the pot and burn.
- Add in leftover rice and liquid aminos, stir so oil and egg mixture coats the rice.
- Let rice cook for about 4 minutes, constantly stirring.
- Add in bacon slices and sesame seeds. Continue to stir. Liquid aminos should be should be evenly distributed throughout the rice.
- Remove your pan from heat and add in lettuce. Let lettuce slightly cook by stirring into the rice. Set fried rice aside.
- Fry remaining eggs over-easy and top each serving of fried rice with a fried egg.
